All of our products are handcrafted, fermented, and packaged in our own manufactory – 100% organic, certified with the Bio Suisse "Bud" label.
In our production, local raw materials meet traditional Japanese methods that have been refined over centuries. After careful and time-intensive preparation, we leave the rest to the microorganisms – and the rhythm of the seasons – during the fermentation process. This natural evolution gives each of our products its unique character. Some of our ferments mature for over a year until they reach their full depth of flavor.

At the heart of our work are classic Japanese techniques and recipes. We place great value on treating the long-standing and rich heritage of Koji, Miso, and more with care and respect – while cultivating them under local conditions to create authentic, regionally rooted products. A key part of this process is our close exchange with Japanese producers and the strong relationships we’ve built within their community.
